Today we’re sharing a super simple recipe for sweet potatoes that will make a delicious side dish to go with just about anything! We call them “Mag-Taters” because our friend, Maggie came up with this recipe! Our favorite way to eat these is aside a nice steak and asparagus! They’re great leftover and your kids may gobble them up as well! Gone are the days of being wary of sweet potatoes and thinking they have to be served with marshmallows on top.. Ick!
2 sweet potatoes
1T. Coconut oil
1/2 t. Sea Salt
1/8 t. or less Cinnamon
These have become one of our favorite easy week night sides!
Preheat oven to 350 degrees. Peel and chop sweet potatoes into bite-sized pieces. To mixing bowl add sweet potatoes, coconut oil, salt and cinnamon. If you don’t like a lot of cinnamon just do a pinch or omit altogether. Once the sweet potatoes are coated well, place them on a lined baking sheet. Roast, tossing occasionally, until tender, 25-30 minutes.
